A simple, healthy, and delicious way to enjoy tuna that everyone will love.
12 oz. canned white tuna
1/2 med. yellow onion
1 tbsp. lemon zest
2 tbsp. lemon juice
3 tsp. mustard
sea salt & black pepper to taste
2 egg
1/2 c. almond flour
1 tbsp. coconut oil
Combine drained tuna, diced onion, lemon zest, lemon juice, mustard, sea salt, and pepper in a bowl. Add eggs, followed by almond flour, and mix well. If the mixture is falling apart or too wet, add more almond flour as needed. Form mixture into 8 patties.
Heat coconut oil in a skillet over medium heat. Add patties to the skillet. Cook for 3-5 minutes, carefully flip the patties, and cook for an additional 2-3 minutes. (Depending on the size of the skillet, you may need to cook the patties in batches.)
