This is one of my favorite salads. Easy to make!
1 c. white quinoa
2 c. water
1/2 tsp. sea salt
15 oz. cooked chickpeas
1/2 c. cilantro, bunch, fresh, organic
1/2 sml. red onion
1 clove garlic
2 tsp. lemon zest
1/4 c. lemon juice
2 tbsp. extra virgin olive oil
2 tbsp. water
1/4 tsp. sea salt
1/4 c. tahini
Combine quinoa and water in a medium saucepan. Heat to boiling, reduce heat, and simmer for about 15 minutes, until water is absorbed and quinoa fluffs up.
While the quinoa is cooking. make the dressing: Whisk together minced garlic, tahini, lemon zest, lemon juice, and olive oil. Add hot water to thin a bit and season with sea salt.
Toss cooked quinoa with chickpeas, cilantro, diced red onion, and half the dressing. Add more dressing if you'd like and season with more sea salt to taste. Serve garnished with a bit of cilantro.
