Lemon Rosemary Salmon

Baked salmon with lemon and fresh rosemary. Smells wonderful! Tweaked from a recipe I found on allrecipes.com. Recipe serves 1-2 depending upon protein allowances.

Ingredients

    7 oz. salmon

    1/2 lemon

    1 tsp. extra virgin olive oil

    sea salt to taste

    2 spg. fresh rosemary

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
    1. Remove bones from salmon and rub 1/2 tsp olive oil on flesh side. Sprinkle with sea salt.
    2. Arrange half the lemon slices in a single layer in a baking dish. Layer with 1 sprig rosemary, and top with salmon fillet, skin side up.
  2. Bake fish 5 minutes. Then, remove fish from oven and peel off skin. (If skin does not easily peel off, cook an additional 2 minutes).
  3. Drizzle skin side with remaining olive oil, sprinkle sea salt, and top with remaining rosemary and lemon slices.
  4. Bake an additional 15 minutes,or until fish is easily flaked with a fork.

Serves 1-2 depending upon protein allowances.
