Grain-free, gluten-free recipe for yummy lemon poppy seed muffins!
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. sea salt
1/4 c. honey, raw
1/4 c. lemon juice
1 tbsp. lemon zest
3 egg
3 tbsp. coconut oil
1 tsp. vanilla extract
1 1/4 c. almond flour
2 tbsp. coconut flour
1 tbsp. poppy seeds
Preheat oven to 350ºF. Line 10 cups of a muffin pan with cupcake liners or grease with coconut oil.
Combine almond flour, coconut flour, poppy seeds, baking soda, baking powder, sea salt, and lemon zest in a bowl.
In a separate bowl, combine honey, lemon juice, eggs, coconut oil, and vanilla. Whisk together.
Add dry ingredients to wet ingredients, and stir to mix well.
Divide batter among 10 muffin cups, filling about 2/3 full.
Bake 15-20 minutes, until a toothpick inserted in center of a muffin comes out clean.
