Delicious lemon-garlic crusted chicken!
8 chicken leg
1/2 c. garlic
1/2 c. lemon juice
1 tsp. lemon zest
1/4 c. extra virgin olive oil
2 1/2 tbsp. dried oregano
1/2 tsp. sea salt
2 tbsp. black pepper
1/4 c. fresh parsley
8 spg. fresh parsley
Rinse and pat-dry chicken. Discard lumps of fat. Place legs, cut side down, in a single layer in a 12- by 17-inch baking pan. In a small bowl, mix minced garlic, lemon juice, lemon zest, olive oil, oregano, salt, and pepper. Smear garlic mixture evenly over chicken.
Bake in a 375°F oven until skin is well browned, about 1 1/2 hours. After 45 minutes, baste with pan juices every 15 minutes. Remove chicken to a warm platter. Skim and discard fat from drippings. Add 1/2 cup boiling water to pan. Stir to loosen browned bits. Pour sauce into a serving bowl. Scatter chopped parsley over chicken, and garnish with parsley sprigs. Makes 8 servings.
