This lemon and garlic marinade makes for really flavorful chicken.
1/2 lbs. chicken breast
2 tbsp. extra virgin olive oil
2 tbsp. lemon zest
2 tbsp. garlic
2 tbsp. fresh parsley
1 tsp. sea salt
1/2 tsp. black pepper
1 tbsp. coconut oil
Whisk together olive oil, lemon zest, minced garlic, minced parsley, sea salt, and pepper. Cut chicken into strips. Pour marinade over chicken in a bowl or shallow baking dish. Cover and refrigerate for at least 30 minutes (the longer, the better – I’d recommend leaving it in the fridge overnight).
Heat coconut oil in a skillet over medium-high heat. Add marinated chicken to the skillet and cook 4-5 minutes on each side.
