Quick and easy side dish.
1 egg
sea salt & black pepper to taste
1 tbsp. fresh parsley
1 tbsp. lemon juice
1 tbsp. dijon mustard
Mash eggs together well in a medium sized bowl. (Use a fork or potato masher.) Add mustard and lemon juice. Mix well. Add seasonings (parsley, salt and pepper) and mix well. Cover and refrigerate overnight.
