A thick, tasty, vegan, gluten-free, raw mayonnaise, that is full of healthy fats and tons of great flavor, and is good on just about anything.
1 avocado
1 tbsp. lemon juice
2 tsp. dijon mustard
1/8 tsp. sea salt
1/4 c. extra virgin olive oil
1/8 tsp. garlic powder
Add the avocado, lemon juice (or substitute lime juice, depending on what you're using this mayonnaise for), and the Dijon mustard to the bowl of a food processor. Process until well pureed, scraping the sides occasionally to get all the errant avocado chunks. Season with the sea salt and the garlic powder; pulse to combine.
Now it's time to make your emulsion, the thing that give the mayo it's wonderfully thick texture. Be patient and take your time. It will be worth it. While your food processor is running, slowly drizzle in the olive oil.
Serving size is 1 tablespoon.
