LB's Coconut Oil Peanut Butter

Deliciously simple peanut butter!

Ingredients

    1 1/2 tbsp. coconut oil

    honey, raw to taste

    sea salt to taste

    2 c. peanuts

Directions

As long as you have a food processor - this recipe is super easy! I used to use roasted but a birdie told me that doesn't flow with the program - so I am going to stray away from my roots and use raw! Also - almonds or any other nut can be combined or substituted.. and they taste fine not roasted :)

Pour peanuts and coconut oil in the food processor. Turn on and let grind until (almost) smooth. Add honey and salt to taste and do the same!

You can grind for as long as you would like, until smooth or leave it a bit chunky. I like to put aside a 1/4 cup of peanuts, grind until smooth, and add the remaining peanuts and pulse so there are distinct chunks.

The coconut oil tastes so much better than any other oil in peanut butter!

For those having crumbly peanut butter.. what size processor are you using? I have noticed that when I half the recipe, this is what happens. It does not get creamy.. I am guessing because there is not enough substance to hold the momentum in the processor. I use a 7 cup processor. I would recommend if you use a 13 cup, double the recipe. I have no problem doubling the recipe in my 7 cup, but I do run into problems when I half it. I would also recommend adding a bit of honey first thing to help it blend.
