Lasagna Stuffed Pepper

Cheesy stuffed peppers!


    8 med. red bell pepper

    8 oz. ricotta cheese

    1 c. mozzarella cheese

    1 egg

    2 oz. parmesan cheese

    1 tsp. dried parsley


Preheat oven to 350ºF.

Slice peppers in half, cleaning out seeds.

In a small bowl mix ricotta, Parmesan cheese, and 4 ounces of mozzarella with a slightly beaten egg and parsley.

Using a 11x13 dish, cover bottom with thin layer of spaghetti sauce. Place pepper halves in dish. Layer each pepper with sauce, then cheese mixture then top with remaining sauce. Cover with tin foil and bake for 55 minutes.

Remove tin foil. Top peppers with remaining 4 ounces of mozzarella cheese and continue to bake another 5 minutes or until cheese is melted. Serve with steamed spinach.
