Honey, peanut butter, coco oat bars. Delicious and filling. Makes 24 bars.
3/4 c. honey, raw
2 tbsp. stevia
1 egg
1/2 c. peanut butter, creamy
1/2 tsp. baking soda
1 tsp. vanilla extract
3/4 c. coconut oil
2 c. old-fashioned oats
1/4 c. coconut flour
1/2 c. cacao powder
In medium saucepan: melt coconut oil on low heat. Add cocoa powder and mix till disolved and no lumps. Set aside to let cool.
In large bowl, combine stevia blend, honey, peanut butter, egg and vanilla. Mix on medium speed until smooth, approx 1 minute.
Combine coconut/cocoa mixture to the large bowl and beat on medium speed for approx 1 minute.
Add coconut flour and baking soda to large bowl and mix for approx 1 minute.
Add oats to mixture: beat untill well combined, about 1 minute.
Press into a prepared 9x11 inch baking pan. And bake at 350 degrees for 20-25 minutes.
Allow to cool for 5 minutes, and cut into 24 portions.
Coach's Note: Each bar has about 1/3 protein in addition to the carb serving.
