This is by far the EASIEST chili recipe I have ever made! Tastes great and very versatile... it's meaty, filling, colorful, and so simple that I think my dog could probably make it!
2 lbs. ground turkey
1 med. onion
3 clove garlic
1 c. frozen corn
1 med. bell pepper, any color
28 oz. crushed tomatoes, canned
15 oz. canned black beans
8 oz. tomato sauce
4 tbsp. chili powder
2 jalapeno pepper
Cook ground turkey, chopped onion, and minced garlic in a large skillet over medium-high heat, stirring until turkey is no longer pink and onion is transparent. Drain and put mixture into a crock pot. Add corn, chopped bell pepper, crushed tomatoes, black beans (drained and rinsed), tomato sauce, chili powder, and finely chopped spicy peppers (optional). Stir well. Cook on low for 6-8 hours or high for 4-5 hours.
Top with Greek yogurt, chives, and raw cheddar cheese if desired.
This chili is thick and meaty. It also makes a great dip for a party. I've even made chili cheese nachos and burritos with this recipe and they taste awesome!
