Sauteed chicken breasts with shallots, mushrooms, bacon & melted Mozzarella. My family loves this! Hubby & Kid tested many times! :)
1/4 tsp. sea salt
1/4 tsp. black pepper
2 slc. uncured bacon
4 oz. mozzarella cheese
4 tbsp. coconut oil
4 chicken breast
1 1/2 c. white mushrooms
2 tbsp. shallots
In a large skillet over medium heat, melt coconut oil. Add mushrooms and shallots and saute. Add salt and pepper and cook mixture about 10 minutes. When done, remove veggies with slotted spoon (so coconut oil will stay in the pan) to a plate. Cover to keep warm. Fry up the 2 slices of bacon. When done, remove to plate, cut each slice in half and cover to keep warm.
Add chicken breasts to pan and cook approximately 10 minutes on each side, or until tender and juices run clear. If you want to add other seasonings, now would be the time.
Transfer chicken to serving platter and sprinkle shredded cheese over each breast while still hot. Take a half of a piece of bacon and put on each breast. Top with the mushroom mixture and let stand about 5 minutes before serving or just until the cheese has melted. You can cover with foil to keep warm OR put in the oven on broil for a minute or so (if your platter is oven safe). That's what I did and it was so warm and good and the cheese all melted and yummy! :)
My kids like to have me drizzle their chicken with a bit of healthy homemade honey mustard and that's really great, too! I just use some Dijon mustard, raw honey (melted), a bit of coconut oil (melted) and a little lemon juice. I mix it up well and the kids and my husband love it. But you can flavor it up any way you'd like.
