Kale Tomato Omelet

This is a great omelet to make whenever you have some leftover kale.


    2 egg

    1/2 c. kale

    1/2 c. diced tomatoes, fresh

    sea salt & black pepper to taste


Lightly beat eggs in a small bowl. Add chopped kale and diced or sliced tomatoes, season with sea salt and pepper, and stir it all up.

Heat skillet over medium heat. Pour egg mixture into the pan. Let eggs set. Use a spatula to fold it in half, and continue to cook, letting the insides completely cook through.
