This is a yummy soup that came to mind because I love the broth that's leftover whenever I make kale or collard greens.
1 lbs. kale
1 sml. onion
3 garlic
6 c. chicken broth
4 tbsp. extra virgin olive oil
2 tbsp. apple cider vinegar
15 oz. canned white beans
1 lbs. Italian turkey sausage
Wash kale and remove the large stems. In a large pot, heat 2 tablespoons of olive oil and saute chopped onions. Add turkey sausage (casings removed) and break into pieces. Remove when browned. Add remaining olive oil to pan and saute minced garlic. Add kale and wilt slightly for about 3-5 minutes. Add chicken broth and apple cider vinegar and simmer until greens are tender (about 15 minutes). Return sausage to pot and add white beans. Warm through and serve!
