Kale salad showered with a sweet coconut milk sauce.
1 c. kale
1/3 c. canned coconut milk
2 tsp. coconut butter
1 tsp. coconut sugar
Cut the kale in fine strips. Heat the coconut milk with the coconut butter and sweetener added. Mix the wet with the dry.
Kale is unbelievably beneficial for health and weight loss. But it tastes so bitter. Fortunately the sweet, rich coconut milk which is free on this diet, transforms this "should eat" green to a "can't wait til next time" green.
