Refreshing Kale soup with Lime.
stevia to taste
2 c. kale
1/4 lime
1 tsp. coconut oil
1 c. water
1 dsh. sea salt
1 tsp. shredded coconut
Rinse the kale leaves and let them soak in water if "life less." Cut kale in pieces. Add water, lime juice, coconut oil, stevia, and sea salt to skillet. Bring to boil. Let simmer for 5 minutes. The center parts of the kale will still be crunchy, so it is fun to eat. But where is the wood/grass taste that everyone talks about?? Not in this kale! The soup water will also taste refreshing to those who like lime/coconut.
The vitamin C (ascorbic acid) will be transformed to dehydroascorbic acid due to the simmering temperature, but this may still be a bioavailable form of vitamin C. Our brains contain a lot of vitamin C, but it has not come there in its original form, because vitamin C cannot pass the blood-brain barrier. But dehydroascorbic acid can. Some think that this vitamin may protect our brains against strokes. Yeah for Kale!
