Kaiserschmarrn is a rich German pancake like dessert or sweet breakfast that I love! I thought I'd have to give it up but I recently revamped the recipe to be BD friendly :) hope you enjoy as much as I do!


    4 whole egg

    1 c. Greek yogurt

    3 tbsp. coconut sugar

    2 1/4 tsp. vanilla extract

    1/2 c. spelt flour

    2 tbsp. coconut oil


Whisk together wet ingredients then add flour and whisk until smooth. In a large frying pan melt half butter/or coconut oil over med-med high heat. Pour in all the batter and cover. Cook until its almost cooked through and able to be flipped in one piece. Flip it over and cook for another minute or 2. Break into bite sized chunks with your spatula or pull apart with 2 forks. Add remaining butter or oil and serve with fruit preserves or just by itself.
