Broiled chicken thighs marinated in kaffir lime leaves and coconut milk. I used a 4oz serving size for the serving information. Entire recipe makes 16 Proteins.
16 oz. chicken thigh, skinless
2 lime
3 canned coconut milk
1/2 tsp. Thai bird's eye chili pepper
1/4 tsp. sea salt
2 garlic
Put chicken thighs in zip-style bag or container for marinating. For quicker cooking, flatten the thighs out a little. If you choose not to, cook time is more like 15-20.
Finely shred Kaffir lime leaves, for stronger flavor. Or, cut into thin strips.
Throw leaves, chile pepper, salt and coconut milk into bag or container with chicken.
Toss chicken about to coat.
Let marinate in fridge at least 2 hours.
After preheating, broil until done on rack about 4-6 inches from broiler, turning over halfway through. If you like a little more char on your chicken, move it closer to broiler.
