Macaroni and cheese is a staple comfort food...and this recipe will not disappoint ;)
4 tbsp. butter
4 oz. uncured bacon
1 pt. whipping cream, heavy, full-fat, raw, grass-fed or pastured, organic
16 oz. mild cheddar cheese
1/4 c. spelt flour
12 oz. spelt elbow macaroni
1 tsp. red pepper flakes
1 tsp. black pepper
1 dsh. sea salt
Preheat oven to 350ºF. Boil water with a dash of sea salt. Cook noodles al dente. Strain and rinse noodles. Pan fry the bacon. Chop into tiny pieces. In a large pot, melt butter. Add cream and spelt flour, and mix. Add half of the cheese, stirring constantly to create the sauce. Add red pepper flakes, ground black pepper, and pancetta bits. Keep stirring. Add noodles to the sauce. Mix well to coat all noodles. Pour half of the macaroni mixture into a casserole dish. Top with half of the remaining cheese (4 ounces). Put the remaining macaroni mixture on top and spread the remaining cheese all over it. Bake for 30 minutes.
