Jamaican Jerk Chicken Tacos

Mexican/Jamaican Fusion!


    1 tbsp. seasoning, caribbean jerk, organic

    1 c. red onion

    1 c. romaine lettuce

    4 tbsp. cilantro

    1 c. Greek yogurt

    1/2 c. homemade mayonnaise

    1 lime

    2 lbs. chicken breast


Season the chicken breasts with jerk seasoning and allow to marinate in the fridge overnight for optimal flavor.

Make the lime crema: combine cilantro, lime juice and zest, Greek yogurt, and mayonnaise in a blender or food processor and process until smooth. Place in the refrigerator to chill for at least 1 hour to allow flavors to build.

Chop up the romaine and onion for the tacos and set aside before grilling the chicken. You can use an indoor grill or outdoor grill and begin to grill the chicken. Once chicken is cooked through, take it off of the heat and cut it into small bite-sized pieces.

Assemble tacos on organic tortillas or lettuce wraps and add your choice of veggies, onions, lettuce, and other healthy toppings!
