Fun combination of ingredients in this omelet!
2 egg
1 pce. uncured bacon
1/2 jalapeno pepper
1 tsp. coconut oil
Lightly beat eggs in a small bowl. Add cooked and crumbled bacon and sliced jalapenos.
Heat coconut oil in a small skillet over medium heat. When it’s melted and has greased the pan, pour the egg mixture into the skillet. Let cook until the edges are set. Use a spatula to fold the eggs in half. Continue to cook, letting the insides cook through. Flip and let cook for another 30 seconds to 1 minute. When the insides are fully cooked, serve warm.
