Jalapeno Armadillo Eggs

No it's not eggs, but the jalapeno and cheese stuffed ground beef takes the shape of an oval :) I don't know about you, but I have a husband who LOVES spicy food. This is a mildly spicy dish that even the kiddos ate up quick!

Ingredients

    1 tsp. garlic powder

    6 jalapeno pepper

    1/2 c. pepper jack cheese

    1 green bell pepper

    1 onion

    1 tbsp. coconut oil

    2 lbs. ground beef

    1/2 c. fresh made salsa

    1 tbsp. chili powder

    1 tsp. ground cumin

Directions

Slice stem tops off Jalapenos and seed vertically. I used a Butter knife to scrape out the seeds. Stuff each pepper with shredded cheese and set aside.

In a mixing bowl, combine ground beef, salsa (of desired spiciness) , chili powder,cumin,and garlic powder.

On a piece of foil, flatten out enough beef into 6 thin and flat rounds. Put a cheese stuffed jalapeno in the center of each and pull up sides to wrap all the way around. Pick it up in your hand to mold into a enclosed oval egg shape.

Grill on med high heat on both sides until thoroughly cooked. About 10-12 min remove from heat and set aside.

in a skillet saute the onion and bell pepper til onions are clear, then top each armadillo egg and serve!
