The best thing I ever made :) I never even missed the crust for one minute
1/2 lbs. turkey breast, skinless, free-range, organic
1 tsp. coconut oil
Preheat grill to medium heat Place the butterflied chicken breast between 2 peices of plastic wrap and pound out the chicken until it is about 1/4 inch thick and in a "roundish" pizza shape. (optional) lightly brush on some melted coconut oil onto the chicken if you are afraid of it sticking to the grill. Place on a hot grill for about 1 minute and flip over. once you flip it, top it with your favorite pizza toppings (I usually just like some olive oil, garlic, basil, tomato and a bit of fresh mozzarella) and let it cook on the grill for another few minutes until chicken is cooked all the way through and cheese is melted. For best results I cover my grill to create an oven-like effect. I serving is 1/2 of a pizza. Pair it with watermelon or a light salad for the ultimate outdoor picnic experience!
