1 lbs. ground turkey
1 tbsp. Italian seasoning
2 c. tomato sauce
4 oz. mozzarella cheese
1 med. spaghetti squash
Preheat oven to 400ºF. Line a baking sheet with parchment paper. Cut spaghetti squash in half lengthwise, and scoop out seeds. Place squash on baking sheet, cut side down. Cook for 20-25 minutes (up to 35-40 minutes, depending on the size of the squash), until skin gives a bit when touched. When squash has cooled enough to handle, scrape out the “spaghetti” strands, mix them with half of the tomato sauce, and layer on the bottom of a casserole dish.
Reduce oven heat to 350ºF.
Brown ground turkey in a skillet over medium heat. Just before the turkey is done cooking, stir in Italian seasoning. Add remaining tomato sauce, and let simmer for 2-3 minutes.
Pour the turkey and sauce mixture over the spaghetti squash, and sprinkle shredded cheese on top. Bake for about 15 minutes, until cheese is melted.
