Italian Style Haddock

You can use any medium textured white fish such as cod or grouper....


    1 lbs. haddock, fresh, wild-caught

    1 lemon

    1/4 c. extra virgin olive oil

    1/4 c. pecorino romano cheese

    3 clove garlic

    4 tbsp. fresh parsley

    1 tbsp. white wine

    sea salt & black pepper to taste

    1 tbsp. butter


  1. Pre-heat oven to 400 degrees.
  2. Wash and dry fish, season with salt/pepper.
  3. Grease baking dish with butter.
  4. Chop parsley.
  5. Mince garlic.
  6. In a bowl, mix olive oil, lemon juice, garlic, romano cheese, parsley and white wine and pour over fish.
  7. Bake fish for 20 minutes.
  8. Serve with 2-3 tbsp juice from baking dish.
