This is a hearty one-pot Italian themed meal! It's easy to prepare and tastes great as-is or over brown rice or brown rice pasta.
3 oz. tomato sauce
8 oz. chicken stock
12 oz. diced tomatoes, canned
sea salt & black pepper to taste
1 honey, raw
1 lbs. Italian chicken sausage
3 garlic
1 sml. yellow onion
1 red bell pepper
4 zucchini
8 white mushrooms
1 eggplant
16 oz. lentils
Brown sausage in 1 tablespoon of coconut oil in a heavy pot, like a chili pot. When fully cooked, remove from pot.
Add 2 tablespoons of coconut oil to pot and add onions, garlic, and red bell pepper. Saute for about 2 minutes. Add zucchini, eggplant, and mushrooms and saute another 2 to 3 minutes. Add dry seasonings to taste.
Add lentils, cooked sausage, diced tomatoes, tomato sauce, and chicken broth. Finish with a TINY drizzle of honey (less is more! You do not want the dish to be sweet, but this will balance the savory Italian sausage).
Stir ingredients gently to mix, cover pot, and cook on low to medium heat for about 10 minutes (less if you like your veggies more "al dente").
Serve over brown rice pasta, brown rice, or eat like chili in a bowl and top with fresh grated Romano or Parmesan cheese if you like.
*Chickpeas (garbanzo beans) or cannelini beans can be substituted for lentils if desired.
