Meat sauce with ground beef served over julienned or spiralized zucchini as the pasta.
1 tbsp. coconut oil
1/4 med. onion
1 clove garlic
6 oz. ground beef
28 oz. whole peeled plum tomatoes, canned
sea salt & black pepper to taste
dried oregano to taste
dried basil to taste
1/4 c. fresh basil
3 sml. zucchini
2 oz. parmesan cheese
Heat coconut oil in a pot over medium heat. Add diced onion and minced garlic, and cook until softened. Add ground beef, and saute until cooked through. Add canned tomatoes, crushing them as you add. Add seasonings and chopped fresh basil. Let sauce simmer while you prepare the zucchini "noodles."
To make the zucchini noodles: Use a mandoline or benriner slicer fitted with a medium sized blade slicer. Peel zucchini (it looks more like pasta this way) and process through slicer of choice. Put in a bowl and then put sauce over. Toss and serve. Top with Parmesan cheese.
