Excellent grain-free, gluten-free chicken nuggets!
1/3 c. parmesan cheese
3 tbsp. almond flour
3/4 tsp. dried basil
1 dsh. sea salt
1/8 tsp. nutmeg
1 lbs. chicken breast
2 tbsp. extra virgin olive oil
Combine grated parmesan cheese, almond flour, basil, sea salt, and nutmeg in a small bowl. Fill a second small bowl with water. Cut the chicken into bite-size pieces, and dip in the water, then coat with the dry mixture.
In a skillet, heat the avocado oil over medium heat. Place the chicken in the pan, and cook until chicken is cooked through, and the "breading" starts to turn a golden color. Make sure to stir the chicken so each side gets cooked.
Move chicken pieces to a paper-towel-lined plate to drain. Enjoy!
