Chili relleno egg casserole topped with Marinara sauce
1 can canned diced green chilies
1 tsp. baking powder
2 c. tomato sauce
6 tbsp. spelt flour
8 egg
1 c. cottage cheese
4 oz. sharp cheddar cheese
Preheat oven to 350 degrees, and grease an 8x8" baking pan with a little coconut oil. Mix together the eggs, cottage cheese, flour, and baking powder (I did this in a high-speed blender). Add grated cheese and diced green chilies. Mix until all is incorporated. Pour batter into the 8x8" baking pan. Bake for 40 minutes or until a knife inserted near the center comes out clean. Serve with warm Marinara sauce. Enjoy!
