Italian roasted zucchini never gets old!
1 med. zucchini
sea salt & black pepper to taste
Italian seasoning to taste
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Thinly slice zucchini and arrange in a single layer on baking sheet. Sprinkle with seasonings and bake for about 20 minutes.
If you want the chips to be crispier, cook them for longer, but make sure you keep an eye on them after the 20-minute mark so they don't burn!
