Isabel's Pumpkin Chicken Chili

There are TWO secret ingredients in this chili - pumpkin and cacao powder!


    1 lbs. chicken breast

    1 c. pumpkin puree, canned

    2/3 c. bell pepper, any color

    2/3 c. red onion

    1 jalapeno pepper

    1/2 c. chicken broth

    2 c. diced tomatoes, canned

    1/4 c. tomato paste

    1 tbsp. chili powder

    1 tbsp. cinnamon

    1/2 tsp. ground ginger

    1/2 tsp. nutmeg

    1 tsp. cacao powder

    1 pinch sea salt

    2 tsp. coconut oil


Heat coconut oil in a large pot or Dutch oven over medium heat.

Sauté diced onions until lightly browned. Add diced bell peppers and diced jalapenos. Sauté for about 5 minutes. Add cubed chicken, chicken stock, diced tomatoes, tomato paste, chili powder, cinnamon, ginger, nutmeg, and sea salt. Simmer for 20 minutes.

Stir in pumpkin and cacao powder. Cook for 5 minutes.

Reduce heat to low, and let sit until ready to serve.
