One of my many "vegetable hiding" techniques...it works perfectly!
2 1/2 c. frozen berries
1 c. frozen broccoli
4 tbsp. gelatin
Heat the berries and broccoli (or substitute frozen zucchini) in a pot until it is mushy. Use a hand immersion blender to puree the mix (make sure to get all the chunks out). Slowly add in the gelatin and continue to puree so the gelatin fully mixes in. You want to be sure your mixture is still very hot as the gelatin will not mix in if it is not hot. Place in a glass pan and let cool for 15 minutes. Place in the refrigerator covered overnight and wake up to delicious jello.
