I was given this recipe as a handout in a Weight Watchers meeting several years ago. I made a couple of changes to comply with Beyond Diet recipes.
32 oz. beef roast
1 tbsp. garlic
1 c. chicken broth
2 tbsp. coconut sugar
3 tbsp. coconut aminos
Place Pork Roast in slow cooker (crockpot). Mix together garlic, broth, sugar and coconut aminos and pour over roast. Cook on low for 2 hours then high for 4 hours.
This is delicious served over brown basmati rice.
The original recipe called for chicken bouillon, sugar or splenda and soy sauce. I made it tonight with the new ingredients and it was so tender I had trouble getting it out of the cooker. The liquid is great spooned over the meat and rice.

I have never cooked this in the oven. But, I would suggest setting the oven to 350 F/175 C and cook for 1 1/2 hours to 2 hours. I inserted a meat thermometer to make sure it was done (170 F/ 77 C).
Remember - 1 ounce of pork is equal to 1 protein.
I found the coconut aminos at the health food store next to the soy sauce. If you don't find it there, try Amazon.
