Indian Beef with Spaghetti Squash

A nice meal for a cool evening, with a little spice!


    1/2 med. spaghetti squash

    1/2 lbs. ground beef

    1/2 med. onion

    1 clove garlic

    1 jalapeno pepper

    1/2 tsp. ground ginger

    1/4 c. canned coconut milk

    1/2 tsp. ground cumin

    1/2 tsp. chili powder

    1/2 tsp. ground coriander

    1/4 tsp. turmeric

    3/4 tsp. sea salt


Cook the spaghetti squash: Cut in half, scoop out the seeds, and place flesh-side down on a baking sheet. Bake at 375ºF for 45 minutes, or until you can easily pierce the skin with a fork. Let cool for about 15 minutes, or until squash is cool enough to handle. Use a fork to scrape out the flesh into spaghetti-like strands.

In a large skillet, cook the ground beef and finely chopped onions until the meat is brown. Mix together all the spices and stir them into the meat. Stir in minced garlic and diced jalapeno. Cook 30 seconds. Add coconut milk and cook 1 minute. Stir in roasted spaghetti squash and cook until heated through.
