Whole Foods had a great sale on Mahi. I had never cooked it before. I asked the employee at the seafood counter what might make a good marinade. He said anything citrus, so this is what I came up with and it is delicious!
1 lbs. mahi mahi
1/4 c. extra virgin olive oil
4 tbsp. lime juice
1 tbsp. honey, raw
sea salt to taste
Squeeze the juice of 2 limes in to a bowl. Add olive oil, honey, sea salt, pepper and whisk together.
Rinse Mahi and pat dry. Lightly season with salt and pepper.
Pour marinade over Mahi and allow to marinate in fridge for at least 1 hour. The longer it marinates, the better.
Heat grill to medium. Line grates with a piece of foil to prevent fish from sticking to the grill.
Pour a little marinade on foil and place Mahi, flesh side down on the foil. Turn after about 3-5 minutes and place skin side down. Pour left over marinade on Mahi and allow to cook for another 10-15 minutes. Once it flakes easily it is done.
