Delicious, slightly sweet fall side!
1/2 med. butternut squash
1 med. Granny Smith apple
1 med. red apple
1/2 c. walnuts
1 tbsp. honey, raw
1 tbsp. extra virgin olive oil
1 tsp. cinnamon
1/2 tsp. nutmeg
1 dsh. sea salt
Preheat oven to 400ºF.
Cut and cube the butternut squash and apples (you can use any apples you want - just make sure one is sweet and one is sour). Arrange in a baking dish or on a parchment-lined baking sheet, and bake for about 20 minutes.
Meanwhile, put the walnuts in a small bowl. Pour honey, olive oil, cinnamon, nutmeg, and salt over walnuts and stir.
Take squash and apples out of the oven, mix them up, and roast for another 15 minutes.
Remove squash and apples from oven, and put in a bowl. Top with walnut mixture and stir. Serve it up!
