Yummy, quick, and easy to prepare in the day and let set and enjoy for dinner. The kids even love this one!
1 1/2 tbsp. coconut oil
2 tbsp. honey, raw
2 tbsp. wheat-free soy sauce
1/8 tsp. black pepper
2 garlic
3 chicken breast
1 med. onion
1 med. red bell pepper
In a large bowl, whisk together oil, honey, soy sauce, pepper, and minced garlic. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, onions, and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
Preheat oven to 425°F.
Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
Lightly oil a cooking sheet and place the skewers on the sheet. Roast in oven for 15-20 minutes, until chicken juices run clear. Turn and brush with reserved marinade.
