Honey and Vanilla Overnight Oats

Simple breakfast item which can be prepared in advance


    2 c. old-fashioned oats

    2 c. homemade coconut milk

    1 c. Greek yogurt

    2 tbsp. chia seeds

    1 tsp. vanilla extract

    1 pinch sea salt

    2 tbsp. honey, raw

    2 tbsp. almond butter


Whisk together all ingredients in a medium-sized mixing bowl.

Spoon into 4 jars with a tight-fitting lid.

Close and refrigerate for at least 4 hours, but preferably overnight before eating.
