These Turkey Sausages (or cutlets as my husband calls them) are terrific for Breakfast with 1/2 tomato or as a side to eggs. Also great for dinner or lunch. They freeze well, precooked and warmed up in the oven.
1 1/2 tsp. ground coriander
1 tsp. paprika
1 tsp. garlic powder
1 tsp. sea salt
1/4 tsp. dried sage
1/4 tsp. dried thyme
1/4 c. chicken broth
1 tbsp. coconut oil
1 lbs. ground turkey
2 slc. sprouted whole grain bread
1/2 med. onion
1/4 tsp. cayenne pepper
1/2 tsp. ground cumin
Finely chop onion in a food processor. Add all the spices to the chopped onion. Add sprouted grain bread and chop again in the food processor. Remove the onion/bread/spice mixture and place in mixing bowl. Add chicken broth. Mix chicken broth into onion/bread/spice mixture. Add ground turkey and mix by hand. Marinate for about an hour or overnight. Wet fingers lightly and roll into small balls. In a small frying pan, brown on both sides in coconut oil until cooked through.
