Homemade Spelt Pasta

Nothing beats homemade pasta - great activity to get the kids to help with

Ingredients

    2 c. spelt flour

    3 egg

    1 tsp. sea salt

    2 tbsp. extra virgin olive oil

Directions

I've only given the ingredients and method for making the pasta dough. For those of you unfamiliar with making homemade pasta - you can check out You Tube videos for the different methods.

I use my food processor which makes the job easier and less messy. Put the spelt flour in the food processor along with the salt. Give it a pulse or two to mix it up a bit. In a measuring cup, beat the eggs with the EVOO. With the food processor running on low - slowly drizzle the egg mixture into the flour. Once the egg is all in, turn the processor up a bit and the mixture will begin to resemble dough, and form a ball-takes less than an minute. Once this happens take the dough out to the processor - it will be a bit sticky - and wrap it in plastic wrap and let the dough rest for 10 to 15 minutes. Once dough has rested you can cut in into four and begin your rolling process.
