I made this today for tonight's dinner. It turned out really well and I wanted to share it. :)
3/4 c. onion
1 clove garlic
1 tsp. coconut oil
4 c. canned whole tomatoes, peeled
12 oz. tomato paste
2 c. water
1 tsp. coconut sugar
1 1/2 tsp. sea salt
1/2 tsp. black pepper
1 1/2 tsp. dried oregano
1 bay leaf
Prepare the vegetables: Chop the onion. Mince the garlic. Cut up tomatoes.
Cook onion and garlic in oil until tender, but not brown. Stir in the other ingredients one at a time while pan is on medium to low heat. Simmer, uncovered for approximately 30 minutes.
Please add spices to this as you'd like. Of course, mushrooms, etc would be great in this. I was just wanting a basic spaghetti sauce that I could make up to use for a variety of dishes. And also, this should freeze very well!
