homemade single waffle

I love waffles. But most recipes are full of fat and carbs. I love this recipe because it is high in protein, wheat-free, and is totally unprocessed (not out of a box). It turns out to be 200 calories. I use at least 1/2 t oil in the batter, otherwise it does not crisp up. I grind my own oats in a clean coffee grinder. A blender works okay too but run it longer to get a finer grain. I love this with fruit and some greek yogurt (not included in nutritional info).

Ingredients

    1 egg white

    2 tbsp. oats, whole, dry, organic

    2 tbsp. flax seeds

    1 tsp. baking powder

    1 tsp. coconut oil

    3 tbsp. milk, raw or organic

    1 tsp. vanilla extract

Directions

Combine oat flour, flax, baking powder, 1/2 t oil, milk, and vanilla.

Beat the egg white until holds stiff peaks. Fold egg white into batter.

Use remaining 1/2 t oil to coat hot waffle iron (or use an oil sprayer).

Cook until crispy.
