Homemade Italian Sausage Patties

Very easy to do and convenient to have on hand when you need it(I use mine for omlets etc...) I like to grind my own meat, but you can have the Butcher do it for you. You can tweak this recipe to make a smaller amount.


    5 lbs. ground pork

    2 tbsp. sea salt

    1 tbsp. black pepper

    1 tbsp. fennel seed

    1 tbsp. paprika

    1 c. water

    1 red pepper flakes


Combine all ingredients and mix thoroughly using a wooden spoon.

I then weigh 5 ounces, make a patty, and place on a tray. Repeat the process until all the meat is used up, do not layer the patties on top of each other. To individually freeze, place in a freezer until frozen. When frozen take them out and place in freezer bag.
