Homemade Granola

This makes about 5 cups and is Ohhh Sooo Yummy Good! :) Serving size is difficult to figure out because each person will want a different amount. For me, 1 Tablespoon or so is what I will love in my yogurt or salads etc. Some might want more. :) If we did 1/4 cup per serving this would make 20 servings (approx).


    1/2 shredded coconut

    3 tbsp. coconut sugar

    3/4 tsp. cinnamon

    1/2 tsp. ground ginger

    1/4 tsp. sea salt

    1/3 c. honey, raw

    2 tbsp. coconut oil

    1 c. dried fruit

    3 c. oats, whole, dry, organic

    1 c. mixed nuts


Preheat oven to 300 degrees F.

Line a rimmed baking sheet with parchment paper.

Mix first 7 ingredients in a large bowl.

Stir honey and coconut oil in a saucepan over medium low heat until smooth.

Pour honey mixture over oat mixture; toss well!

Spread on prepared parchment covered baking sheet.

Bake until golden, stirring every 10 minutes for about 40 minutes. Watch carefully and do stir often!

When done, place baking sheet on cooling rack. Stir granola as it cools.

When cool, mix in dried fruit (optional).

Store in an airtight container.

This makes approx. 5 cups of granola. I'm unsure of the serving amount.

This is So good! I'm thinking just a spoonful in my yogurt etc will be delicious!

~~You could also add in some dark chocolate pieces (BD approved) to this granola once it is 100% cooled. The next time I make this I'm gonna use maple syrup just to see how that tastes.~~
