A three-squash combination resulting in a colorful and delicious vegetable dish. CROCKPOT!! I used all fresh veggies from our local farmer's market. Made this yesterday --- absolutely delicious. Planning to add chicken breast slices for leftovers this evening.
4 tbsp. butter
2 c. sprouted whole grain croutons
3 tbsp. parmesan cheese
1 tbsp. fresh chives
4 med. zucchini
2 med. yellow squash
1 sml. summer squash
1/2 tsp. garlic
1/2 tsp. sea salt
1/4 tsp. black pepper
Cut all squash into 3/4-inch pieces. Put squash in bottom of crockpot. Sprinkle with salt, pepper, and minced fresh garlic. Dot with slices of butter. Sprinkle with sprouted grain bread (made into herb croutons), then top with cheese and chives. Cover and cook on LOW setting about 6 hours or until squash are tender.
