Tasty gluten-free recipe that's great as a side dish for any meat entree.
1 tbsp. butter
1 c. white quinoa
2 c. vegetable broth
2 tsp. garlic
2 tbsp. fresh parsley
1/2 tsp. fresh thyme
1/2 tsp. sea salt
black pepper to taste
1 sweet onion
1/4 c. dried cranberries
1/8 dsh. lemon juice
Melt butter in a saucepan over medium heat. Add quinoa and cook until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce heat to a simmer, cover, and cook about 15 minutes, or until quinoa is tender.
In a bowl, toss quinoa with chopped garlic, chopped parsley, chopped thyme, salt, pepper, finely chopped onion, and cranberries. Sprinkle with lemon juice, and serve.
