The pork tenderloin is delicious served hot, cold, or at room temperature. The 20-minute roasting time in the oven allows sufficient time to prepare your side dishes and voila, dinner is ready!
1 lbs. pork tenderloin
1 tsp. ground cloves
2 bay leaf
3/4 tsp. peppercorns, black, organic
1 tsp. dried sage
stevia to taste
1/2 tsp. sea salt
1 tbsp. coconut oil
Preheat oven to 400ºF. Finely grind the cloves, bay leaves, and whole peppercorns using a spice grinder (mortar and pestle will also work nicely) and toss with the sage, stevia, and sea salt. Pat the spice mixture onto all sides of the pork tenderloin. Set aside while you heat the coconut oil in a large skillet over medium-high heat. Add the tenderloin and sear on all sides, about 5 minutes.
Transfer tenderloin to the oven and roast for about 20 minutes, check with oven thermometer, if in doubt.
Remove from oven when done, and transfer to a cutting board; let rest for about 10 minutes before slicing. While tenderloin is resting, finalize preparation of your side dishes. ENJOY hot, at room temperature, or cold.
