An easy side dish; adjust the herbs to your liking! Great with chicken or fish.
1 c. white quinoa
1 tbsp. coconut oil
2 c. water
1/2 tsp. dried oregano
1/2 tsp. dried thyme
1/4 tsp. dried rosemary
2 tbsp. lemon juice
1 tsp. sea salt
1/4 tsp. black pepper
1/2 tsp. lemon zest
3 tbsp. fresh parsley
Place the quinoa in a large bowl; fill with cold water. Stir to release any foreign particles. Drain into a strainer and repeat the rinsing and draining process two more times.
Over medium-high heat, heat the coconut oil in a large saucepan. Add the rinsed quinoa and cook, stirring, until the quinoa makes a cracking noise and has a slightly nutty aroma, about 5 minutes. Stir in the water, oregano, thyme, and rosemary. Bring to a boil, reduce heat, and simmer, covered about 15 minutes.
Stir in lemon juice, salt, pepper, lemon zest, and parsley. Simmer, covered, about 5 minutes. Fluff with a fork and serve warm.
