Nice alternative to heavily sugared versions!
2 lrg. egg
1/2 tsp. vanilla extract
1 c. coconut sugar
1 1/2 c. spelt flour
1 tsp. baking soda
1/4 tsp. sea salt
1 tsp. cinnamon
1/2 tsp. ground allspice
1/4 tsp. ground cloves
1/2 c. hemp seeds
1 c. raisins
1 c. chopped nuts
1/2 c. butter
Preheat oven to 350 degrees and place rack in centre of oven. Line baking sheet with parchment paper.
In electric mixer beat butter and sugar until well mixed. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
In a separate bowl whisk together flour, baking soda, salt and spices. Add the flour mixture to the butter/egg mixture until well combined. Mix in hemp hearts. Fold in raisins and nuts.
Drop the batter by teaspoons onto the prepared baking sheets, spacing the cookies @ 2 inches apart. Bake for about 10 minutes or until the cookies are lightly browned. Cool on wire rack.
